In una ciotola, mescolare la farina integrale con la ricotta, l'uovo e l'acqua fino a ottenere un impasto omogeneo.

Stendere l'impasto in uno stampo da 20 cm e riporre in frigorifero per 10 minuti.

Nel frattempo, tagliare a cubetti le verdure: zucchina, peperone e melanzana.

Tritare finemente la cipolla e rosolarla in una padella con l'olio extravergine d'oliva per 2 minuti.

Aggiungere le verdure nella padella e cuocere a fuoco medio per 10-12 minuti, salando e pepando a piacere.
