Method

In una ciotola, mescolare la farina di avena, le proteine in polvere, il lievito e il cardamomo. Aggiungere l'uovo e il latte di soia, mescolando fino a ottenere un impasto liscio.

Lavorare l'impasto per circa 2 minuti fino a renderlo omogeneo, poi formare una palla e lasciarla riposare per 10 minuti.

Modellare l'impasto in una forma tonda e appiattita, posizionarlo su una teglia rivestita di carta forno e farlo riposare per altri 5 minuti.

Cuocere in forno preriscaldato a 180°C per circa 15 minuti, o finché non è dorato. Lasciare raffreddare.

Preparare il ripieno mescolando lo yogurt greco con l'eritritolo fino a ottenere una crema.

Tagliare la parte superiore del panino, scavare leggermente l'interno, riempire con la crema di yogurt e richiudere con la calotta.
