1. In una casseruola, porta a ebollizione l'acqua e l'eritritolo, mescolando fino a scioglierlo completamente. Riduci il fuoco e lascia sobbollire finché non ottieni un caramello leggero.2. In una ciotola, sbatti le uova con lo yogurt greco, l'estratto di vaniglia, la scorza di limone e il pizzico di sale.3. Aggiungi il caramello raffreddato al composto di uova e mescola delicatamente.4. Versa il composto in uno stampo per budino precedentemente rivestito di carta forno.5. Cuoci a bagnomaria in forno preriscaldato a 160°C per circa 60 minuti, fino a quando il budino è solidificato.6. Lascia raffreddare a temperatura ambiente per almeno un'ora, poi riponi in frigo fino al momento di servire.
