Inizia a condire il petto di pollo con sale e pepe. Riscalda l'olio in una padella e rosola il pollo per circa 3 minuti per lato, quindi trasferiscilo in una pentola.

Nella stessa padella, aggiungi la cipolla tritata e l'aglio, soffriggendo per circa 2 minuti. Aggiungi il peperoncino e il coriandolo, mescolando per 30 secondi.
