Pulire le alici rimuovendo con delicatezza la testa e la lisca centrale, lasciandole unite sul dorso. Sciacquarle brevemente e asciugarle su carta assorbente.

Lessare gli spinaci freschi in acqua salata per 3-4 minuti, quindi strizzarli bene per eliminare tutta l'acqua in eccesso.

Tritare finemente l'aglio e mescolare gli spinaci squeezed con la ricotta magra, l'aglio, il Parmigiano reggiano, il prezzemolo fresco, sale e pepe.

Aggiungere l'uovo alla miscela e mescolare fino a ottenere un composto omogeneo.
