Preriscalda il forno a 180°C e prepara una teglia per muffin con pirottini di carta.

In una ciotola piccola, mescola 30 g di fiocchi d'avena, un cucchiaino di zucchero di cocco e un pizzico di cannella per il topping e metti da parte.

In una ciotola grande, unisci i fiocchi d'avena, la farina integrale, lo zucchero di cocco, la cannella, il lievito e il sale.

In un'altra ciotola, mescola la purea di mele, il latte di mandorle, l'olio, l'uovo e l'estratto di vaniglia fino a ottenere un composto omogeneo.
