Preriscalda il forno a 200°C.

In una padella grande, scalda l'olio d'oliva e rosola il filetto di maiale su tutti i lati fino a doratura.

Rimuovi il filetto dalla padella e spennella con la senape di Digione.

Nella stessa padella, aggiungi le cipolle e le mele e cuoci per circa 5 minuti, finché non si ammorbidiscono.

Aggiungi la cannella, sale e pepe, mescolando bene.

Trasferisci le mele e le cipolle in una teglia, posiziona il filetto sopra e copri con un foglio di alluminio.

Cuoci in forno per 30-35 minuti o fino a quando il maiale raggiunge una temperatura interna di 70°C.

Lascia riposare per 5 minuti prima di affettare. Guarnisci con prezzemolo fresco e servi.
