Cuoci la quinoa in acqua salata secondo le istruzioni del pacchetto, poi scolala e lasciala raffreddare.

In una padella, scalda l'olio d'oliva e aggiungi la cipolla tritata. Cuoci fino a quando non sarà traslucida.

In una ciotola capiente, mescola la quinoa cotta, il pollo macinato, la cipolla cotta, il sale, il pepe e la paprika.

Preriscalda il forno a 180°C e ungi una teglia da forno.

Versa metà del composto di quinoa e pollo nella teglia, pressando bene.

In una padella, tosta i pinoli fino a doratura e distribuiscili uniformemente sopra il primo strato di kibbeh.

Copri con il restante composto di quinoa e pollo, livellando bene la superficie.

Con un coltello, pratica delle incisioni a rombo sulla superficie del kibbeh.

Inforna per circa 30 minuti, fino a doratura.
