Taglia le melanzane a fette, cospargile di sale e lasciale riposare in un colino per 30 minuti per eliminare l'amaro.

In una padella antiaderente, scalda un cucchiaio di olio e fai rosolare la cipolla e l'aglio. Aggiungi la carne macinata di tacchino e cuoci fino a doratura.
