Riscalda il forno a 200°C con la modalità ventilata. Lava le patate dolci, tagliale a dadini di circa 2 cm e trasferiscile in una pirofila antiaderente.

Pulisci i funghi con un panno umido, affettali in fette spesse circa 5 mm. Tritare finemente l'aglio e il prezzemolo insieme.

Versa metà dell'olio sulle patate, salale, pepale e rimescola. Inforna per 12 minuti, finché iniziano a dorare.

In una padella antiaderente, riscalda il resto dell'olio a fuoco medio. Aggiungi l'aglio tritato e i funghi, fai rosolare per 3-4 minuti, girando di tanto in tanto.

Sfuma con il vino bianco, lascia evaporare per 2 minuti. Aggiungi il brodo vegetale, sale e pepe. Fai cuocere a fuoco medio per 5 minuti.

Disponi i filetti di baccalà sulla pirofila con le patate dolci semi-cotte. Versa sopra il composto di funghi e brodo. Copri la pirofila con un foglio di carta forno.

Inforna per 18-20 minuti, finché il baccalà si sfoglia facilmente con una forchetta.

Sforna, cospargi di prezzemolo tritato fresco e gocce di succo di limone. Se desideri, aggiungi scaglie di parmigiano reggiano. Servi subito mentre è fumante.
