Preriscalda il forno a 180°C. In una padella grande, scalda l'olio d'oliva e aggiungi la cipolla e l'aglio. Cuoci fino a quando la cipolla diventa trasparente.

Aggiungi le melanzane, le zucchine e il peperone e cuoci per circa 5-7 minuti, mescolando di tanto in tanto.

Unisci i pomodori pelati, l'origano, il basilico, il sale e il pepe. Mescola bene e fai cuocere per altri 5 minuti.

Trasferisci il composto in una teglia da forno e distribuisci uniformemente la mozzarella sopra.
