Tritare finemente 80 g di pistacchio e 60 g di mandorle in una ciotola, aggiungere cannella (1 cucchiaino) e sale (1 pizzico), mescolare bene.

Preriscaldare il forno a 175°C.

Spennellare leggermente una teglia rettangolare (20x25 cm) con olio di oliva.

Stendere 2 fogli di pasta fillo sovrapposti, spennellare con olio d'oliva, adagiare nella teglia.

Distribuire metà del ripieno di frutta secca in strato uniforme.

Coprire con 2 fogli di pasta fillo spennellati d'olio, distribuire il ripieno rimasto.

Completare con i 2 fogli di pasta fillo finali, spennellando l'ultimo strato.

Con un coltello affilato, segnare geometricamente (rombi o quadratini) senza tagliare completamente.

Infornare per 32-35 minuti a 175°C fino a doratura croccante.

Nel frattempo, scaldare in un pentolino l'acqua (100 ml) con sciroppo d'acero (2 cucchiai), zucchero di canna (30 g), scorza di arancia e succo di limone, portare a ebollizione e lasciar sobbollire 5 minuti, aggiungere vaniglia.

Togliere la baklava dal forno, versare lo sciroppo tiepido uniformemente sulla superficie.

Lasciar raffreddare completamente prima di tagliare seguendo i segni e servire.
