Preparare la salsa al cacao: in un pentolino piccolo, fondere il cioccolato fondente con il latte scremato a fuoco basso, mescolando continuamente per 2-3 minuti fino a ottenere una cremina liscia. Aggiungere il burro di arachidi e il sale, mescolare bene e lasciar raffreddare a temperatura ambiente per 5 minuti.

Preparare la panna: montare leggermente la panna fresca con l'estratto di vaniglia fino a ottenere una consistenza soffice ma non troppo dura (circa 30 secondi di frullata).

Tagliare le banane: sbucciare le banane e tagliarle longitudinalmente a metà. Adagiare una mezza banana per lato su ognuno dei 4 piatti da portata.

Aggiungere il gelato: posizionare una pallina di gelato proteico alla vaniglia e una di gelato proteico al cacao accanto alle banane, nel solco naturale.

Guarnire con la panna: aggiungere un cucchiaio generoso di panna montata sopra il gelato.

Irrorare: versare circa 1-2 cucchiai della salsa al cacao sui gelati e sulla banana.

Finish: spolverizzare con le nocciole tritate e, se desiderato, aggiungere una fragola fresca sul lato del piatto.

Servire subito, finché il gelato è ancora freddo.
