Lavare accuratamente le barbabietole rosse sotto acqua fredda corrente, strofinando con le mani per eliminare residui di terra.

Portare a ebollizione una pentola d'acqua salata e immergere le barbabietole intere (non pelate) per 18-20 minuti, fino a quando la punta di un coltello le attraversa facilmente.

Scolare le barbabietole e trasferirle in una ciotola con acqua fredda per fermare la cottura e facilitare la pelatura.

Una volta intiepidite, sfregare la pelle con le dita o con una piccola spugna umida: la buccia si staccherà naturalmente.

Tagliare le barbabietole pelate in bastoncini di circa 1 cm di spessore.

Disporre i bastoncini su una teglia rivestita di carta forno, distribuire metà dell'olio EVO e condire con sale, pepe e cumino.

Infornare a 200°C per 15 minuti, mescolando a metà cottura.

Togliere dal forno, cospargere con semi di zucca tostati e parmigiano reggiano.

Aggiungere l'olio EVO rimasto in un filo sottile, completare con un leggero goccio di aceto balsamico e servire caldo o tiepido.
