Cuoci la quinoa in acqua salata seguendo le istruzioni sulla confezione, di solito 15 minuti. Scola e metti da parte.

In una padella, scalda 1 cucchiaio di olio d'oliva e aggiungi gli spinaci. Cuoci per 2-3 minuti finché non appassiscono, poi aggiungi la salsa di soia e mescola bene.

In un'altra padella, griglia il petto di pollo per circa 6-7 minuti per lato, fino a quando non è ben cotto. Lascia raffreddare, poi taglia a strisce.

Inci una ciotola grande, distribuisci la quinoa come base, poi adagia sopra gli spinaci, la carota, le strisce di pollo, e infine le fette di cetriolo.

Completa con un uovo sopra ogni porzione e guarnisci con gochujang, semi di sesamo e peperoncino in fiocchi a piacere.
