In una ciotola, mescola l'uovo con l'eritritolo fino a ottenere un composto pallido e spumoso (circa 2 minuti).

Aggiungi il burro chiarificato a temperatura ambiente e mescola bene, poi incorpora lo zenzero fresco grattugiato.

In un'altra ciotola, setaccia insieme la farina di mandorle, le proteine in polvere, il lievito e il sale.

Unisci gli ingredienti secchi al composto umido e amalgama fino a formare un impasto omogeneo.

Avvolgi l'impasto nella pellicola trasparente e riposa in frigorifero per 20 minuti.

Preriscalda il forno a 175°C. Rivesti una placca con carta forno.

Su un piano di lavoro leggermente infarinato, stendi l'impasto a uno spessore di 3 mm con un mattarello.

Ricava i biscotti con formine della forma desiderata e disponili sulla placca, distanziandoli di 2 cm.

Cuoci a 175°C per 12 minuti circa: i biscotti devono restare teneri al centro e leggermente dorati ai bordi.

Ritira dal forno, lascia raffreddare sulla placca per 5 minuti, quindi trasferisci su una griglia per il raffreddamento completo.
