In una ciotola mescola farina d'avena, proteine in polvere, lievito per dolci, cannella e sale.

In un'altra ciotola sbatti l'uovo e aggiungi miele e olio di cocco sciolto, mescola fino a ottenere una crema omogenea.

Versa il composto liquido nel composto secco e amalgama bene con un cucchiaio di legno fino a formare un impasto coeso e appiccicaticcio.

Aggiungi i semi di lino, girasole e sesamo all'impasto e mescola accuratamente.

Avvolgi l'impasto nella pellicola trasparente e riponi in frigorifero per 90 minuti.

Preriscalda il forno a 180°C e rivesti una placca con carta forno.

Stendi l'impasto tra due fogli di carta forno con un mattarello fino a uno spessore di 0,5 cm.

Ritaglia i biscotti con formine a tuo piacere e disponili sulla placca preparata, distanziati di 2 cm l'uno dall'altro.

Cuoci in forno per 12-14 minuti fino a quando i bordi risultano leggermente dorati e croccanti.
