In una ciotola, mescola farina di mandorle, cacao in polvere, proteine in polvere, lievito, bicarbonato e sale fino.

In un'altra ciotola, sbatti il burro morbido con l'eritritolo fino a ottenere un composto cremoso (circa 2 minuti).

Aggiungi l'uovo e l'estratto di vaniglia, mescola bene.

Incorpora gradualmente il mix di polveri all'impasto bagnato, mescolando fino a ottenere un impasto omogeneo.

Avvolgi l'impasto nella pellicola e riponi in frigorifero per 45 minuti.

Preriscalda il forno a 180°C e rivesti una placca con carta forno.

Stendi l'impasto tra due fogli di carta forno fino a circa 3 mm di spessore.

Ritaglia rettangoli di circa 3×6 cm con un coltello o uno stampo.

Cuoci in forno a 180°C per 12 minuti fino a quando i biscotti risultano leggermente dorati ai bordi.

Lascia raffreddare sulla placca per 5 minuti, poi trasferisci su una gratella.

Sciogli il cioccolato fondente a bagnomaria o al microonde (30 secondi per volta).

Con una sac à poche sottile, decora i biscotti ricreando i classici puntini del domino sulle due metà.
