Method

Mescola il burro morbido con 30 g di zucchero di canna fino a ottenere un composto cremoso. Aggiungi l'uovo intero e lavora per 2-3 minuti.

Incorpora il caffè espresso freddo, il cacao in polvere, la farina integrale e un pizzico di sale. Mescola fino a formare un impasto omogeneo.

Avvolgi l'impasto nella pellicola trasparente e riponi in frigorifero per almeno 1 ora.

Togli il cioccolato fondente a dadini e mettilo in una ciotola. Riscalda il caffè rimanente e versalo sul cioccolato, lascia riposare 2 minuti, poi mescola fino a ottenere una ganache liscia.

In un'altra ciotola, unisci la ricotta, il mascarpone leggero e lo zucchero a velo. Montali delicatamente con una frusta per 1-2 minuti fino a ottenere una crema soffice. Incorpora la ganache di cioccolato con un cucchiaio di gomma.

Preriscalda il forno a 170°C e fodera due teglie con carta da forno.

Stendi l'impasto su un piano infarinato fino a uno spessore di 3 mm. Ricava i biscotti con una taglia biscotti di piccole dimensioni.

Disponi i biscotti sulle teglie con distanza di 2 cm e inforna per 8-9 minuti fino a quando i bordi risultano leggermente dorati. Lascia raffreddare completamente su una griglia.

Distribuisci 1 cucchiaio di crema tiramisu su un biscotto e sovrapponi un secondo biscotto, pressando leggermente.
