Preparare l'impasto: in una ciotola mescolare la farina integrale, il sale e l'erba cipollina tritata. Aggiungere il burro chiarificato a cubetti e l'acqua fredda, lavorare con le dita fino a ottenere un impasto sabbioso e compatto. Avvolgere nella pellicola e refrigerare 1 ora.

Nel frattempo, tritare finemente il salame magro e trasferirlo in una ciotola. Aggiungere la ricotta magra, il parmigiano e il pepe nero, amalgamare bene. Coprire e refrigerare fino al momento dell'utilizzo.

Preriscaldare il forno a 200°C. Foderare una placca con carta forno.

Estirare l'impasto dal frigorifero, togliere la pellicola e stenderlo tra due fogli di carta forno fino a 0,5 cm di spessore.

Con una rotella dentellata ricavare quadratini di circa 4x4 cm: dovrai ottenere 40 biscotti (20 coppie).

Disporre 20 biscotti sulla placca, spennellare leggermente con latte scremato e cospargere con semi di sesamo tostati.

Disporre i restanti 20 biscotti sulla placca senza semi di sesamo.

Cuocere a 200°C per 18-20 minuti fino a doratura leggera. Estrarre dal forno e raffreddare completamente su una griglia.

Trasferire il ripieno in una tasca da pasticceria con bocchetta liscia. Farcire i 20 biscotti senza sesamo, quindi ricoprire ciascuno con un biscotto al sesamo, premendo leggermente.
