Cuocere il manzo in acqua bollente per circa 6-7 minuti, scolarlo e tritarlo finemente.

In una padella, scaldare 5ml di olio EVO a fuoco medio-basso; aggiungere gli spinaci e cuocere fino a che non appassiscono. Unire il manzo tritato, salare, pepare e mescolare per 3-4 minuti.

In una ciotola, sbattere l'uovo con il latte di mandorla, la farina d'avena, le proteine in polvere e l'eritritolo. Lasciare riposare per 10 minuti.

Scaldare 5ml di olio in una padella antiaderente a fuoco medio. Versare 40ml di impasto per formare un blini e cuocere 1-2 minuti fino a doratura, poi girare e cuocere per 1 minuto.

Ripetere l'operazione per formare 3-4 blini.

Distribuire il ripieno di manzo e spinaci su un lato di ogni blini, piegare e arrotolare.
