Scalda leggermente il latte scremato e versalo in una ciotola con la farina integrale, le proteine in polvere, l'uovo intero, il lievito e un pizzico di sale; mescola fino a ottenere un impasto omogeneo e lascialo riposare 20 minuti coperto.

In una ciotola pulita monta l'albume a neve ferma con una frusta manuale fino a triplicare il volume.

Incorpora delicatamente l'albume montato all'impasto con movimenti dal basso verso l'alto usando una spatola, cercando di mantenere la morbidezza.

Scalda il burro chiarificato in una padella antiaderente a fuoco medio-alto.

Versa circa 2 cucchiai di impasto per blinis, creando frittelle di circa 8-9 cm di diametro.

Cuoci per 1 minuto e mezzo fino a quando compaiono bolle sulla superficie e il fondo è dorato, quindi capovolgile con una spatola e continua la cottura per altri 90 secondi sull'altro lato.
