Inizia preparando la marinata: in una ciotola, mescola il succo di limone e arancia, l'aglio tritato, l'origano, la paprika e il pepe.

Prendi la carne e pratica delle incisioni profonde su entrambi i lati. Massaggia la marinata sulla carne, coprila e lasciala riposare in frigorifero per almeno 1 ora.

In una pentola grande, scalda l'olio d'oliva a fuoco medio. Aggiungi la carne e rosolala su tutti i lati fino a doratura, circa 8-10 minuti.

Rimuovi la carne dalla pentola e aggiungi la cipolla, la carota e la zucchina. Cuoci fino a quando le verdure sono tenere.

Rimetti la carne nella pentola, aggiungi il brodo di carne e le foglie di alloro. Porta a ebollizione, quindi copri e riduci il fuoco al minimo. Cuoci a fuoco lento per 1.5 ore.
