Method

Inizia pelando e tagliando a cubetti le patate dolci. Cuocile in acqua salata fino a renderle tenere, circa 15 minuti. Scolale e mettile da parte.

Nel frattempo, in una pentola, porta a ebollizione il latte scremato e aggiungi il merluzzo fresco. Cuoci a fuoco medio finché il pesce si sfalda, circa 10 minuti. Rimuovi il pesce dal latte e mettilo in una ciotola, conservando il latte.

Schiaccia le patate dolci con una forchetta e unisci il merluzzo sfaldato. Aggiungi un po' di latte di cottura fino a raggiungere la consistenza desiderata.

Aggiungi l'olio d'oliva, il succo di limone, l'aglio tritato, il rosmarino e il pepe nero. Mescola bene fino a ottenere un composto omogeneo. Regola di sale.

Trasferisci la preparazione in una teglia da forno e livellala. Inforna a 200°C per 15-20 minuti, fino a doratura.
