Preriscalda il forno a 180°C e prepara uno stampo per muffin con pirottini di carta.

In una ciotola, mescola yogurt greco, farina di cocco, uova, eritritolo, amido di mais, estratto di vaniglia e un pizzico di sale fino ad ottenere un composto omogeneo.
