Preriscalda il forno a 180°C e rivesti una teglia rettangolare di circa 30x20 cm con carta da forno.

In una ciotola grande, monta gli albumi a neve ferma e metti da parte.

In un'altra ciotola, sbatti i tuorli con lo yogurt greco, il dolcificante, l'estratto di vaniglia e un pizzico di sale fino ad ottenere un composto omogeneo.

Aggiungi le farine di mandorle e integrale al composto di tuorli e mescola delicatamente.

Incorpora gli albumi montati a neve, mescolando dal basso verso l'alto per non smontarli.

Cuoci in forno per circa 12 minuti, o fino a doratura.
