Method

In una ciotola, unire la farina integrale, l'albume, lo yogurt, l'olio, il lievito sbriciolato e il sale. Mescolare fino a ottenere un impasto omogeneo.

Trasferire l'impasto in una ciotola infarinata, coprire e far lievitare in un luogo caldo fino al raddoppio del volume (circa 1 ora).

Nel frattempo, in una padella, scaldare un filo d'olio e aggiungere i peperoni a cubetti. Soffriggere per circa 10 minuti fino a renderli teneri.

Aggiungere la feta e le olive tritate ai peperoni, mescolare e togliere dal fuoco.

Riprendere l'impasto lievitato, sgonfiarlo e stenderlo formando un rettangolo.

Distribuire uniformemente il ripieno di peperoni, feta e olive sull'impasto, quindi arrotolarlo su se stesso per formare un cilindro.

Intrecciare il cilindro su se stesso formando una treccia e posizionarla su una teglia rivestita di carta forno.

Lasciar lievitare nuovamente per 20 minuti.

Preriscaldare il forno a 180°C.

Cuocere la brioche per 25 minuti o fino a doratura.
