Preparare la pasta: in una ciotola versare la farina integrale, la margarina vegetale tagliata a pezzetti e il sale. Lavorare velocemente con le dita fino a ottenere un impasto sabbioso. Aggiungere gradualmente l'acqua fredda fino a formare un panetto compatto. Avvolgere nella pellicola e riposare in frigorifero per almeno 20 minuti.

Nel frattempo preparare le verdure: lavare e asciugare zucchine, melanzana e peperone. Tagliarli in cubetti di circa 1 cm. Tritare finemente la cipolla rossa.

In una padella antiaderente scaldare l'olio a fuoco medio. Rosolare la cipolla per 2 minuti finché non diventa traslucida.

Aggiungere il peperone e cuocere per 3 minuti. Successivamente aggiungere la melanzana e continuare la cottura per altri 3 minuti.

Unire le zucchine e i pomodorini, salare leggermente, cospargere di origano e cuocere a fuoco medio-alto per 4-5 minuti finché le verdure rimangono croccanti. Trasferire il composto in uno scolapasta per eliminare l'umidità in eccesso.

In una ciotola mescolare la ricotta magra con l'uovo, aggiungere il parmigiano grattugiato e una macinata di pepe nero.

Preriscaldare il forno a 190°C.

Stendere l'impasto tra due fogli di carta forno fino a uno spessore di 3-4 mm. Trasferire il disco in uno stampo per crostata da 24 cm rivestito di carta forno.

Creare un bordo rialzato (circa 1 cm) lungo il perimetro. Distribuire il composto di ricotta sulla base in strato uniforme.

Stendere la ratatouille di verdure sull'impasto in modo omogeneo.

Infornare per 32-35 minuti finché la base non risulta dorata e croccante. Se la superficie si scurisce troppo prima della fine della cottura, coprire con un foglio di alluminio.

Estrarre dal forno e lasciar riposare 5 minuti prima di affettare. Servire tiepida o a temperatura ambiente.
