Method

Preriscaldare il forno a 180°C e foderare una teglia quadrata (18x18 cm) con carta forno.

In una ciotola resistente al calore, sciogliere a bagnomaria il cioccolato fondente tritato insieme al burro, mescolando con un cucchiaio di legno fino a ottenere un composto liscio e omogeneo.

Tritare grossolanamente le mandorle con un coltello su un tagliere.

In una ciotola capiente, sbattere leggermente le uova con lo zucchero di cocco usando una forchetta per circa 2-3 minuti fino a ottenere un composto chiaro.

Unire alla miscela di uova il composto di cioccolato e burro sciolto, mescolando delicatamente dall'alto verso il basso.

In una ciotola piccola, mescolare la farina di mandorle, le proteine in polvere, il cacao amaro, il lievito chimico e il sale.

Incorporare la miscela secca nella miscela umida con movimenti lenti e decisi, fino a ottenere un impasto omogeneo senza grumi.

Aggiungere le mandorle tritate e mescolare per distribuirle uniformemente.

Versare l'impasto nella teglia preparata e livellare la superficie con una spatola bagnata.

Cuocere in forno a 180°C per 22-25 minuti: il brownie deve risultare ancora leggermente morbido al centro ma stabile ai bordi.

Estrarre dal forno e far raffreddare completamente sulla teglia per almeno 30 minuti prima di tagliare in 8 quadrati uguali.

Servire a temperatura ambiente o leggermente tiepido.
