Preriscaldare il forno a 160°C. Preparare uno stampo per torta da 18 cm di diametro foderato con carta forno.

Per la torta al limone: in una ciotola mescolare gli albumi con la stevia e la scorza di limone fino a ottenere una schiuma leggera. Aggiungere la farina di riso, il lievito e il sale, incorporando delicatamente il latte e l'olio di mandorle alternati. Versare l'impasto nello stampo e cuocere per 28-30 minuti finché uno stecchino inserito esce pulito. Lasciar raffreddare.

Per la frittata: tagliare a dadini le zucchine, i peperoni e i pomodorini. Sbattere gli albumi con le due uova intere, aggiungere la ricotta, il sale e il pepe. Scaldare l'olio in una padella antiaderente, versarvi le verdure e farle cuocere 2 minuti. Aggiungere il composto di uova e cuocere a fuoco medio-basso per 6-8 minuti fino a quando la frittata si rapprenderà. Cospargere di prezzemolo fresco.

Per le crepes: mescolare l'uovo con il latte di mandorla, incorporare la farina integrale e il sale. Lasciare riposare 5 minuti. Scaldare l'olio di cocco in una padella antiaderente, versare un piccolo mestolo di impasto, inclinare la padella per distribuire uniformemente e cuocere 1 minuto per lato. Ripetere fino a esaurire l'impasto.

Servire il brunch a temperature diverse: la frittata calda o tiepida, le crepes calde, la torta a temperatura ambiente o leggermente fredda.
