In una ciotola, unire la farina d'avena, le proteine in polvere, il lievito e il sale. Mescolare bene.

In un'altra ciotola, montare gli albumi a neve ferma e aggiungere l'acqua frizzante e l'eritritolo, continuando a montare fino a ottenere un composto spumoso.

Incorporare delicatamente gli ingredienti secchi agli albumi, utilizzando una spatola per non smontare il composto.

Versare il composto in uno stampo per panini da 80 g rivestito di carta forno.
