Sciacquare il riso integrale in acqua fredda fino a quando non risulta limpida, quindi scolarlo. Mettere il riso in una pentola con 300 ml di acqua e portare a ebollizione. Ridurre il fuoco e coprire, lasciando cuocere per 30-35 minuti, o fino a quando l'acqua è assorbita. Spegnere e far riposare coperto per 10 minuti.

In una ciotola, mescolare l'aceto di riso con l'eritritolo fino a scioglierlo, quindi incorporarlo al riso cotto. Lasciare raffreddare.

Mescolare il surimi con lo yogurt greco in un'altra ciotola e mettere da parte.

Preparare la stuoia di bambù coprendola con carta trasparente. Posizionare un foglio di nori, con il lato lucido verso il basso, sulla stuoia. Con le mani bagnate, distribuire uniformemente uno strato di riso sul nori, lasciando 1 cm libero al bordo inferiore. Cospargere con semi di sesamo.

Disporre i bastoncini di cetriolo e le fette di avocado lungo il centro del riso, poi aggiungere il composto di surimi.

Sollevare il bordo della stuoia e arrotolare il sushi partendo dal bordo inferiore, compattando bene. Una volta arrotolato, avvolgere nella stuoia e formare un cilindro stretto.

Con un coltello bagnato, tagliare il rotolo in pezzi da 2 cm.
