Sciacquare il riso integrale fino a quando l'acqua non risulta trasparente. Cuocere il riso con 2 tazze d'acqua in una pentola, portando a ebollizione per circa 5 minuti. Ridurre il fuoco, coprire e lasciare sobbollire fino a completa assorbimento dell'acqua (circa 20-25 minuti).

Trasferire il riso cotto in una ciotola non metallica e lasciarlo raffreddare.

In una piccola pentola, mescolare l'aceto di riso, lo zucchero di cocco e il sale. Portare a ebollizione e far sobbollire per 3-4 minuti, quindi unire al riso freddo, mescolando delicatamente.

Posizionare un foglio di nori su una stuoia per sushi, con il lato ruvido verso l'alto. Con le mani bagnate, distribuire uniformemente una manciata di riso sul nori.

Disporre l'avocado a fette, la carota tagliata a striscioline e i gamberetti sul nori, a circa 2 cm dal bordo più vicino.
