Method

Inizia lavando bene il limone sotto acqua corrente per rimuovere eventuali residui di pesticidi.

Con un coltello affilato, taglia le estremità del limone e poi affettalo a spicchi per estrarre la buccia.

Rimuovi la polpa, lasciando solo la parte esterna.

Metti le scorze in un pentolino con 100 ml di acqua e porta a ebollizione. Cuoci per circa 15 minuti per ammorbidire le scorze.

Scola le scorze e risciacquale sotto acqua fredda.

In un altro pentolino, unisci l'eritritolo e un pizzico di sale all'acqua e porta a ebollizione.

Aggiungi le scorze di limone e cuoci a fuoco lento per circa 45 minuti, mescolando di tanto in tanto finché non diventano trasparenti.

Togli le scorze dalla pentola e mettile su una griglia per un'ora per farle asciugare.

Se desideri, puoi cospargerle con un po' di eritritolo per un tocco extra e lasciare asciugare per ulteriori 2 ore.
