In una ciotola, mescola la farina integrale con il sale e l'olio. Aggiungi lentamente l'acqua fredda fino a ottenere un impasto omogeneo. Formare una palla e avvolgerla nella pellicola trasparente. Riporla in frigorifero per 30 minuti.

Stendi l'impasto su una superficie infarinata fino a ottenere uno spessore di circa 3 mm. Ritaglia delle strisce di 2 cm di larghezza.

Rivesti 8 coni in acciaio da cannoli con le strisce di pasta, sovrapponendole leggermente. Spennella con un poco d'olio e cospargi di semi di sesamo.

Cuoci in forno preriscaldato a 200°C per 15-20 minuti, fino a doratura. Lascia raffreddare.

Nel frattempo, cuoci gli asparagi in acqua bollente salata per 5 minuti, scolali e raffreddali in acqua ghiacciata.

Taglia le fette di tacchino a metà e spalmale con un velo di senape. Avvolgi 2 gambi di asparagi per ogni fetta di tacchino e inseriscili nei coni di pasta.

Servi immediatamente, guarnendo a piacere con pepe nero.
