Inizia sciacquando gli astici e separando le code dai corpi. Taglia le code in pezzi e mettile in una ciotola. Separa anche le chele.

Scalda l'olio di sesamo in una padella profonda a fuoco medio. Aggiungi l'aglio tritato e lo zenzero, soffriggendo per circa un minuto.

Aggiungi i pezzi di astice e le chele, cuocendo fino a quando l'astice non diventa opaco, per circa 4-5 minuti. Trasferisci l'astice e l'aglio in un piatto e tieni in caldo.

Nella stessa padella, aggiungi il pollo macinato e cuoci fino a quando non è più rosa. Versa il brodo di pollo e porta a ebollizione mescolando.

In una ciotola a parte, mescola la salsa di soia, l'amido di mais e il miele. Aggiungi il composto alla padella e cuoci fino a quando non si addensa, circa 2 minuti.

Aggiungi i cipollotti affettati e rimuovi dal fuoco. Versa le uova sbattute e mescola fino a ottenere pezzetti piccoli di uova.

Rimetti l'astice nella padella e cuoci a fuoco basso per 3 minuti per amalgamare i sapori. Servi caldo.
