Inizia tritando finemente la cipolla, la carota e il peperone. Poi, taglia le zucchine a cubetti.

In una casseruola, scalda l'olio extravergine di oliva e aggiungi le verdure tritate. Soffriggi per circa 5 minuti fino a quando diventano tenere.
