Method

Versare la farina integrale su un piano di lavoro, creare una fontana e aggiungere le 2 uova intere, 80ml di acqua fredda e 8g di olio. Impastare con le mani per 5-6 minuti fino a ottenere un impasto liscio e compatto.

Avvolgere l'impasto in pellicola trasparente e riposare in frigorifero per 30 minuti.

Nel frattempo, tritare finemente cipolla, carota e sedano. Scaldare 8g di olio in un tegame a fuoco medio e aggiungere il soffritto, cuocendo per 3 minuti fino a doratura.

Aggiungere le fave fresche, il brodo vegetale, sale e pepe. Portare a bollore e cuocere a fuoco medio-basso per 30 minuti fino ad ammorbidire le fave.

Riprendere l'impasto riposato, staccarne porzioni e ricavare cordoncini di circa 1 cm di diametro. Tagliare in pezzetti di 2-3 cm e appiattirli con le dita sul piano infarinato per creare la forma caratteristica con incavo.

In una pentola separate, portare abbondante acqua salata a ebollizione. Immergere i cavati e cuocere per 4-5 minuti fino al galleggiamento, quindi scolare.

Versare il brodo di fave in una zuppiera, aggiungere i cavati scolati, mescolare delicatamente. Sgusciare le uova sode, tagliarle a metà e disporle in superficie.

Completare con prezzemolo fresco tritato, un filo di olio extravergine e parmigiano grattugiato. Servire immediatamente.
