Method

Scaldare l'olio in una pentola grande a fuoco medio-alto. Aggiungere cipolla e aglio tritati finemente, rosolare per 2-3 minuti fino a quando diventano trasparenti e profumati.

Unire la carota e il sedano tagliati a dadini, cuocere per 3 minuti mescolando, finché le verdure iniziano a intenerirsi.

Versare i pomodori pelati con il loro succo, amalgamare bene e lasciar cuocere per 2 minuti a fuoco vivace.

Aggiungere i ceci ammollati (o ceci in scatola ben scolati), il brodo vegetale, il rosmarino e l'alloro.

Portare a ebollizione, quindi abbassare il fuoco e lasciare sobbollire coperto per 25-30 minuti, finché i ceci sono teneri e le verdure si sfaldano leggermente.

Regolare di sale e pepe. Se la zuppa risulta troppo brodosa, aumentare il fuoco per gli ultimi 5 minuti e far evaporare un po' di liquido.

Servire in piatti fondi, decorare con prezzemolo fresco e un filo di olio extravergine a crudo.
