Method

Preriscaldare il forno a 180°C. Strofinare 12 stampini da mini crostatine (diametro 5 cm) con burro chiarificato.

Setacciare farina integrale in una ciotola. Aggiungere il burro chiarificato ammorbidito, l'uovo intero, il miele e la scorza di limone grattugiata.

Impastare delicatamente con le dita fino a ottenere un composto omogeneo e friabile. Avvolgere in pellicola e riposare in frigorifero 30 minuti.

Stendere l'impasto tra due fogli di carta forno fino a 3 mm di spessore. Ricavare 12 dischi di 7 cm di diametro.

Adagiare ogni disco negli stampini, pressare delicatamente sui bordi e forare il fondo con uno stuzzicadenti.

Coprire con carta forno e riempire con fagioli secchi o sfere di ceramica. Cuocere 12 minuti a 180°C.

Rimuovere i pesi e proseguire 6 minuti fino a doratura. Lasciar raffreddare completamente e sformare.

Mescolare ricotta magra, proteine in polvere, cannella e vaniglia fino a crema liscia.

Riempire i cestini con la crema di ricotta proteica.

Distribuire mirtilli e lamponi freschi su ogni cestino e aggiungere un cucchiaio di yogurt greco come finitura. Servire subito.
