Adagia le fette di carne di manzo su un piano di lavoro e condisci entrambi i lati con sale e pepe. Spalma un lato con la senape.

Posiziona le strisce di pancetta sulla senape e cospargi con la paprika.

Disponi le fette di cipolla sulla carne e metti i cetriolini equidistanti su ogni fetta.

Inizia ad arrotolare la carne dal lato più largo, mantenendo ben stretti gli ingredienti all'interno.

Fissa i rotoli con dello spago da cucina in modo che non si aprano durante la cottura.

Scalda l'olio in una pentola antiaderente a fuoco medio-alto e rosola i rotoli su tutti i lati per circa 8 minuti.

Rimuovi i rotoli dalla pentola e abbassa la fiamma a medio-basso.

Sciogli il burro nella pentola e aggiungi la farina, mescolando per un minuto.

Versa il brodo di carne freddo e mescola energicamente per amalgamare.

Rimetti i rotoli nella pentola con i succhi accumulati e cuoci a fuoco molto basso, coperto, girando ogni 20 minuti, fino a quando la carne è tenera, circa 1 ora e mezza.

Quando la carne è cotta, rimuovila e lascia riposare.

Alza il fuoco per far addensare il liquido di cottura per un minuto e servi le rouladen con la salsa.
