Method

Lavare accuratamente i peperoncini rossi dolci e piccanti, eliminare i semi dai peperoncini piccanti e tritare finemente insieme all'aglio fresco con un coltello.

In un pentolino a fuoco medio, versare l'aceto di mele e aggiungere il miele (o eritritolo), mescolando fino a leggera ebollizione.

Aggiungere i peperoncini e l'aglio tritati, l'aceto balsamico, il lievito nutrizionale e la curcuma. Mescolare bene.

Ridurre il fuoco a basso e lasciare cuocere per 15-20 minuti, mescolando occasionalmente, finché il composto non raggiunge una consistenza densa e caramellata.

Togliere dal fuoco e lasciar intiepidire per 5 minuti, quindi aggiungere le proteine in polvere (già setacciate) mescolando fino a incorporazione completa.

Regolare di sale e pepe.

Trasferire in vasetti di vetro sterilizzati (3 vasetti da 120 g circa), chiudere ermeticamente e conservare in frigorifero per massimo 3 settimane, oppure a temperatura ambiente per 2-3 mesi.
