In una ciotola, mescola il latte di mandorla tiepido con il miele e l'olio di cocco fino a sciogliere bene il miele.

In un’altra ciotola, unisci la farina integrale, il lievito e il sale. Aggiungi il mix di latte e mescola fino a ottenere un impasto appiccicoso.

Aggiungi l'uovo e le proteine in polvere, quindi impasta per circa 10 minuti su una superficie infarinata fino a ottenere un impasto liscio ed elastico.

Forma una palla con l’impasto e mettila in una ciotola leggermente unta, coprila con un panno e lasciala lievitare in un luogo caldo per circa 45 minuti, o fino al raddoppio del volume.

Nel frattempo, prepara il ripieno mescolando la farina di cocco con un po' di latte di mandorla fino a ottenere una consistenza cremosa.

Dopo la lievitazione, sgonfia l'impasto e dividilo in 16 pezzi. Stendi ogni pezzo in una forma ovale e metti un cucchiaino di ripieno al centro.

Richiudi i bun formando una pallina e ponili su una teglia rivestita di carta forno, con la chiusura verso il basso.

Copri i bun con un panno e lascia lievitare per altri 30 minuti.

Preriscalda il forno a 180°C e inforna i bun per 15 minuti o fino a doratura.
