Preriscaldare il forno a 180°C e ungere bene con olio di cocco una teglia per muffin da 12 cavità.

Tritare finemente il cioccolato fondente in una ciotola usando una grattugia o un coltello affilato; mettere da parte.

In una terrina, montare le uova intere con l'eritritolo usando le fruste elettriche per 2-3 minuti fino a ottenere un composto spumoso e pallido.

Aggiungere la ricotta magra e lo yogurt greco setacciati, mescolando delicatamente dal basso verso l'alto con una spatola.

Incorporare la proteina in polvere, il cacao amaro, la vaniglia, l'amido e il lievito, mescolando con movimenti lenti e avvolgenti per evitare di smontare il composto.

Unire il cioccolato fondente tritato e mescolare brevemente fino a incorporare.

Distribuire l'impasto equamente nelle 12 cavità della teglia (circa 35-40g per muffin) usando un cucchiaio da gelato.

Infornare a 180°C per 17-18 minuti, fino a quando i bordi risulteranno leggermente dorati ma il centro rimane morbido.
