Preriscalda il forno a 160°C. In una ciotola, sbatti i tuorli con l'eritritolo fino a ottenere un composto chiaro e spumoso.

In un pentolino, scalda il latte di mandorla a fuoco medio, aggiungendo il cioccolato fondente a pezzetti e un pizzico di sale. Mescola fino a quando il cioccolato è completamente sciolto e il composto è omogeneo.

Togli dal fuoco e unisci l'estratto di vaniglia.

Versa lentamente il composto di cioccolato nel mix di tuorli, mescolando continuamente per evitare che le uova si rapprendano.

Distribuisci la crema in sei ramekin e disponili in una teglia con acqua calda (bagnomaria).

Cuoci in forno per circa 30-40 minuti o fino a quando i bordi sono fermi ma il centro è ancora leggermente tremolante.

Lascia raffreddare a temperatura ambiente, poi riponi in frigorifero per almeno 4 ore.

Prima di servire, spolvera un po' di eritritolo sulla superficie e caramellizza con un cannello da cucina per ottenere una crosticina croccante.
