Sciogliere il lievito secco in 280 ml di acqua tiepida insieme a un pizzico di zucchero e attendere 5 minuti fino a visualizzare la formazione di schiuma.

In una ciotola grande, setacciare insieme la farina 00, la farina manitoba, le proteine in polvere e il sale.

Versare gradualmente l'acqua con lievito sulla miscela secca, mescolando con le mani fino a ottenere un impasto ruvido.

Trasferire su un piano di lavoro leggermente infarinato e impastare energicamente per 8-10 minuti fino a ottenere un impasto liscio ed elastico.

Formare una palla, porre in una ciotola leggermente unta con olio e coprire con un panno umido. Lasciare lievitare a temperatura ambiente per 90 minuti fino al raddoppio del volume.

Riprendere l'impasto e dividerlo in 4 porzioni uguali. Allargare delicatamente ogni porzione con le mani per formare la caratteristica forma ovale piatta delle ciabattine, lasciando lo spessore di circa 1,5 cm.

Disporre le ciabattine su una teglia rivestita di carta forno, spolverare generosamente con semola e coprire con un panno. Lasciare riposare per 45 minuti.

Preriscaldare il forno a 200°C. Cuocere le ciabattine per 12 minuti a 200°C, quindi abbassare a 180°C e proseguire per altri 13 minuti fino a doratura.

Estrarre dal forno e lasciar raffreddare completamente prima di servire.
