Preriscaldare il forno a 175°C. Rivestire uno stampo a ciambella di diametro 24 cm con carta da forno bagnata e strizzata.

In una ciotola capiente, montare a frusta le uova intere con gli albumi e l'eritritolo per 3-4 minuti fino a ottenere una spuma densa e bianca.

Aggiungere con delicatezza lo yogurt greco, l'olio di cocco, il succo di arancia e il succo di limone, mescolando dal basso verso l'alto.

In una seconda ciotola, setacciare insieme la farina di mandorle, la farina integrale, le proteine in polvere, il lievito e il sale.

Unire gli ingredienti secchi a quelli umidi con movimenti avvolgenti, incorporando la carota grattugiata e le scorze di agrumi.

Versare il composto nello stampo e lisciare la superficie con una spatola umida.
