Method

In una ciotola, mescolare le farine di segale e avena con le proteine in polvere e il sale.

In un'altra ciotola, sciogliere il lievito di birra secco in 250 ml di acqua tiepida e aggiungere il cucchiaino di miele.

Unire il composto liquido agli ingredienti secchi e impastare fino a ottenere un impasto omogeneo.

Aggiungere l'olio extravergine di oliva e continuare a impastare fino a che l'impasto non risulti liscio e leggermente appiccicoso.

Formare una palla con l'impasto e metterla in una ciotola leggermente unta. Coprire con un canovaccio e lasciare lievitare per circa 1 ora in un luogo caldo.

Preriscaldare il forno a 180°C.

Trasferire l'impasto lievitato in uno stampo per ciambella precedentemente unto.

Cuocere in forno per 25-30 minuti, fino a quando la superficie sarà dorata.

Sfornare e far raffreddare su una gratella prima di servire a fette.
