Preriscaldare il forno a 180°C in modalità statica. Preparare 6 stampi per ciambelline rivestendoli con carta forno o spruzzandoli leggermente con olio di cocco.

In una ciotola grande, montare gli albumi con il miele per circa 2 minuti fino a ottenere una schiuma leggera e volumetrica.

In una seconda ciotola, setacciare insieme proteine in polvere, farina di mandorle, cacao, fecola, lievito e sale.

Versare delicatamente i secchi nei bianchi montati, alternando con l'olio di cocco fuso e l'acqua tiepida, mescolando con movimenti dal basso verso l'alto per mantenere l'aria.

Aggiungere la vaniglia grattuggiata e mescolare fino a amalgamazione completa.

Riempire gli stampi per ⅔ della loro capacità con il composto.

Cuocere in forno a 180°C per 16 minuti: le ciambelline dovranno risultare sode al tatto ma leggermente morbide al centro.

Estrarre dal forno e lasciar riposare 3 minuti negli stampi per stabilizzarsi.

Sformare con delicatezza e trasferire su una gratella per raffreddare completamente (circa 20 minuti).
