Prepara i biscotti: in una ciotola mescola farina integrale, lievito, sale e cacao amaro.

In un'altra ciotola, lavora l'uovo con il miele e l'olio di cocco fino a ottenere un composto cremoso.

Unisci gli ingredienti secchi a quelli umidi, mescola fino a formare un impasto omogeneo.

Stendi l'impasto tra due fogli di carta forno e ricava biscotti con uno stampino da 5 cm.

Cuoci in forno a 180°C per 10 minuti finché non risultano croccanti.

Aggiungi il cacao amaro, la polvere proteica, il miele e la vaniglia.

Mescola continuamente con una frusta per evitare grumi, finché la miscela non raggiunge i 75°C (circa 5-6 minuti).

Aggiungi la fecola di patata diluita in 30 ml di acqua fredda e continua a mescolare fino all'addensamento (2-3 minuti).
